CAMPARI ACADEMY UK is excited to announce our next workshop in the Drink Hacking series; Fermentation Hacking.
In collaboration with Dr. Johnny Drain (Noma’s Nordic Food Lab, Silo, Win-Win Food Labs), Fermentation Hacking is a holistic look at how to implement sustainable programs into your bars no matter the size of your venue or experience with fermentation.
Please join us for an interactive afternoon exploring the wonderful flavours that fermentation delivers, and yes, there will be goodie bags to take back to your bars and expand your flavour journey.

About Dr. Johnny Drain:
Johnny ( @DrJohnnyDrain ) works at the cutting edge of food, fermentation, food design and sustainability, helping to rethink and reshape how we can feed the world in a more healthy, regenerative, equitable and ecologically-friendly way.
Since receiving a Ph.D. in materials science from Oxford University, Johnny has helped create delicious things for the world’s very best restaurants, bars, and brands, including Noma’s Nordic Food Lab, zero-waste Silo, the Mr. Lyan family, and Prada. He has a particular focus on using fermentation to unlock deliciousness, circularity and nutrition.
He co-founded food tech startup Win-Win Food Labs—which uses fermentation to create sustainable, ethical alternatives to unsustainable, unethical foods, starting with chocolate—and co-founded MOLD Magazine, part of www.thisismold.com, a print magazine exploring the intersection of food, design, and how to feed the world of the future.
He writes and speaks about the future of food and challenges in global food systems through his work with @thisisMOLD, a critically acclaimed editorial platform about designing the future of food. In 2025, Penguin Life will publish his first book ‘Adventures in Fermentation’.
