CAMPARI ACADEMY UK invites you to go BEYOND BUBBLES: Getting Nerdy at Edinburgh Bar Show 2025!

During the seminar on the subject of cocktail carbonation, Bart Miedeksza and Valentino Girotto, authors of ‘Bubbles: A Guide to Carbonated Cocktails’ will look into how the bubbles are born.

To truly understand carbonation, you need to grasp the science behind it. Carbonation is about understanding the gas’s comfort zone—what it likes and dislikes.

Secondly, we’ll look at how the carbonation process impacts the delicate flavour balance in your drink. We’ll analyse the most common aromatic compound groups and see how CO2 amplifies or diminishes our olfactory perception of them.

Lastly, we’ll explore how to approach the carbonation process at the bar and outline the do’s and don’ts.

Expect plenty of chemistry and physics, served in a digestible way, with practical experiments to go hand in hand with the theory.
